About This Coffee

Roberto Bernardes is an innovative young farmer from the community of Morro Grande in Poço Fundo, Southern Minas Gerais (aka the Sul de Minas coffee region). His 20 hectare farm Sitio Taquara sits at 1,200masl. Roberto has been experimenting with extended fermentation without innoculants with around 10% of his production and this lot is the fruit of that experimentation.

The Region

Sitio Taquara is a leader in the coffee community of Morro Grande. It provides services to various neighbours in drying, processing and temporary storage. This microregion is knonwn for high quality coffee and Sitios are all eager to try new methods to improve the quality of their coffees. Sul de Minas (South Minas) is the largest coffee growing region in Brazil and the world, and is home to some of the best coffees in Brazil. The region is characterised by mountainous terrain, rich fertile soil and vast natural reserves of Brazil’s Atlantic Rainforest. The favourable climate and relief, together with handmade coffee production, are the secrets of the award-winning region. The factors for success are a dedication at all stages of production, solid infrastructure and investment in research. 

The Process

Red and yellow catuai cherries are harvested and then fermented in sealed drums for up to 8 days. The fermented cherries are then sun dried on raised beds followed by 4 days on patio and finally finished in a mechanical dryer.
