About This Coffee

This regional selection is sourced from smallholder farmers in the subregion of Callayuq in Cajamarca, northern Peru. These producers typically follow organic practices on farms averaging 3ha in size. Farm elevations range up to 1,800masl and cultivate Caturra, Catuai and Catimor varieties.

The Region

The district of Callayuq belongs to the province of Cutervo located in at the north of Cajamarca and is one of the most rugged geographies of the province with lowland areas at 895 m.a.s.l. up to its highest point 2817 m.a.s.l. Needless to say this wide range of altitudes allows the district to have many different ecosystems and landscapes.

Callayuq is made up of many natural forests
covered with native species of trees and shrubs which provide a dense coverage and harbor an important biodiversity of flora and wildlife of high bioecological value. Between 1200 and 1800 MASL where the weather is warm and humid enough during the day and cool and dry during the night, coffee farmers strive to collect and process high quality coffee cherries. Aside of coffee, livestock farming, sugar cane, rice and tropical fruits ar also important economic activities in Cayalluq.

The Process

Coffee production is an art, requires dedication, passion, and commitment. In this region farmers have learnt how take the best advantage of the land understanding the characteristics, climate, and elevation of the region. Washed coffee it is the traditional processing in the region.

Usually, farmers start their activities early in the morning, after breakfast. They walk to the field to
pick the best cherries. At the end of the day they float the cherries in water to sort out the ripe and overripe cherries. The next step is removing the pulp out of the skin also known as depulping. The de-pulper can be a hand crank or mechanical, depending on their access to electric power.

The cherries are left in the tanks to ferment overnight until they are ready to be washed. Once the coffee is thoroughly washed, the coffee is sun dried on concrete patios. If the weather is sunny, this process takes about 9 - 10 days.

Once the coffee if fully dried the coffee is bagged and stored until the time comes to bring it to our buying units.
